Choco Cherry Mazurek

This cake is just OMG! It’s insanely addictive and so good!
Imagine a crunchy bottom with soft and sweet middle and cherry on the top to balance it out. Sounds like heaven?

Ingredients:

For the bottom:

170g of plain/cream flour

80g of potato flour

1/2x teaspoon of baking powder

1x teaspoon of cinnamon

2 1/2x tablespoon of cacao

1x pinch of salt

50g of sugar

150g of cold butter

1x egg

1x teaspoon of vanilla extract

For Coffee Cream

125ml double cream (30 or 36%)

1 1/2x teaspoon of instant coffee

1x teaspoon of cinnamon

30g of butter

200g of white chocolate

For the top:

40g of milk and dark chocolate mix

1x splash of milk/cream

200g of frozen/fresh or in syrup cherries

3x teaspoons of sugar

juice from half of lemon

1x flat teaspoon of potato flour

Start with making bottom part of the cake: Take a bowl, sift all your dry ingredients to it. Then add chopped butter, egg and vanilla extract. Either hand knead it or use mixer for it.
Formulate a ball from it - it should not stick into your fingers. Cover with cling film and leave in a fridge for an hour.

In the meantime you can prepare small tray and 2x pieces of baking paper. Leave it on a side.

After the hour that cake rested, roll out the dough in between 2x baking papers for a size of your tray and a bit. Move it to your tray (with those baking papers). Lift the top paper and using your hands cover the bottom and a bit of a side - as you will use it like a vessel to fill up with the middle part.

Using fork gently prick the dough. Move to fridge until oven will be ready for 175C in fan.

Bake for around 15-20min. Leave to cool.

In the meantime make your cherry in thick gel for the top. Take a small pot, add your cherries (if like me using cherries from compote - remove the juice for the moment, add fruits only), sugar and leave to simmer on a small heat. Take around 1/3x glass of compote and mix with potato flour. Add to you fruits with lemon juice. Mix well and that’s when the magic happen! It will make a nice thick syrup. Leave to cool.

When your cake is cooling start making the inside - in the pot bring to boil cream, coffee and cinnamon. Take it off the heat, add butter and chocolate. Mix well. Leave to cool for a bit.

When ready add to your cake. When that’s on add your cherries in thick gel and cover with melted chocolate mix with few drops of milk/cream.

Leave to cool and enjoy!
