Austrian Pancake
Let me tell you something about this pancake - it’s so fluffy like the most beautiful cloud in the sky, filled with goodies, baked in one pan to share between. But it’s sooooo good!
Trust there is a piece of heaven on a plate for you.
This recipe comes from Thermomix cookbook, but have few of my own changes.

Ingredients:
70g of brown sugar
60g of currants (I’ve mixed raisins and cranberries), make a strong tea and pour over it and leave for currants to soak in a bit for like 20-30mins
30g flaked almonds
20g of flavoured vodka (I’ve used peach version)
50g unsalted butter, plus extra for pan
4x eggs, separated
Pinch of salt
250g of milk
130g of plain flour
Icing sugar for dusting (optional)
Take a bowl and bit your egg whites with pinch of salt and 35g of sugar for fluffy mixture.
In another bowl mix your egg yolks, milk and flour. Then slowly add half of your egg white mixture and then the other half and mix gently.
Preheat oven to 200C degrees.
Take a pan that can also be used in the oven. Add some butter from your reserved butter amount and leave to melt. When ready add your pancake mixture onto a pan, add your currants (gently soak them off the tea with your hand), scatter some almonds and on top pour in some vodka. Cook on medium heat until the sides are coming off.
Then put your pan into preheated oven and cook until lovely and gold. It should take between 5-15mins (oven depending).
Carefully remove the pan then from oven. I had second pan similar size to the first preheated with some butter on it and I flipped the pancake into that pan then. Cook for further 5mins in medium heat then flip upside down and serve. You dust it with icing sugar, but it’s so good as it is you can just enjoy it!
